Catalytic Converter

I have an 89 560SL. The car is in great shape as I just finished installing all new chain guides/Tensioners.

My next project is customizing the exhaust. My plan is to have dual exhaust pipes, one (1) per side coming out in front of the rear tires.

I am considering removing the catalytic converter and just going into pipes and muffler etc.

In Florida we do not do inspections and the converter is old is probably going to need replacement soon.
Can I just remove. If so, do I need to make any adjustments with the engine and what do I do with the oxygen sensor?

If you like breathing oxygen, keep the converter. Removing it is a federal offense, not necessarily a state offense.

If you need a compact high-performance converter a metallic spun fits the bill. I've put ~6k on mine, wrapped in fiberglass, with 0 issues.

I would agree, plus the O2 sensor provides input for rich and lean mixture

If you want a TRUE dual exhaust you'll need 2.
