I'm with Kestas on the possibility of the caliper or rotor being involved. It could be a related problem that has now surfaced. Here's a checklist (and please don't take offence, some are very obvious I know, and I'm not implying any incompetence on your part at all. No harm in being thorough):
1. Caliper mounting bolts tightened to spec. 2. If hub and brake disc are separate on your model, and were taken apart to fit hub into a press to instal races, are they re-assembled correctly and torqued to spec. 3. Is inner bearing seated properly on the axle. 4. Are the brake pads dragging on either wheel 5. Is there something that might have caused the original bearing to need replacement that is now showing up with the new bearing installed. Put another way, are there any other front suspension components that could be causing this, and their/its effect was masked or overridden by the original bad bearing? i packed the new bearings by hand - is it possible I didn't pack them well enough?

If you forced the grease between the rollers, then you probably packed them properly. I always do mine by hand.
Regardless, poor packing would not result in the problems you're now having. The bearings would need to be severely defective (severely failed) to result in pulling to one side and vibration. I would look elsewhere for your problem, like the brakes, tires, and suspension, not the bearing.

The brakes are new (Rotors and pads) from about 4 months ago.
I just find it odd that withing a 4 hour span of me doing the bearing that something broke in the car. |

I have respect that you did a bearing replacement, and my following question is just a shot in the dark, but how did you support the car when you did the bearing work, could the sway bar have been bent by accident.

Jacked up with a floor jack using the rubber jacking points under the rocker panels.
