Bleeder screw has a hole down the center...use an EZ Out that fits in the hole to remove the broken screw.

I agree with Lyons about the EZ out. I'll bet that if you were to try and grind a slot in the top of it with a dremel then use a screwdriver, you'll just take the upper portion of the bleeder off. The piece has too small of a diameter and is under too much torque for the even thinner sides to hold. I do however use that trick with a lot of other stripped/broken bolts/screws, but I don't think it would work here.

It seems to me that the bleeder screws would most likely never freeze in the caliper if when changing pads it was turned 3/4 of turn.

From my experience bleeder screws break from never being used, over tightened or both.

Nope. I agree with you. There is a small chance that air enters the bleeder threads. A very small amount.
