Replacing evaporator: Other items to replace too
 
When people replace or have their evaporators replaced on 124s are they also replacing all the vacuum elements and the vacuum changeover valve?

Anthing else to replace? I recall reading some may also replace heater core.

I replaced all the vacuum elements. I did not replace the changeover valve nor the heater core. Looking back, I should have replaced the heater core since it has to come out anyways although mine is still good (knock on wood) after all these years...
If you do it yourself, change your instrument and a/c vents light bulbs and specially the evaporator drain hoses on each side of the center console. They will get destroyed when you take them apart. You can get a better hose at home depot...You will know what I mean when you get there...

The only "while you're there" parts when doing the evap are the vac pods and the rubber elbows on them. The rubber elbows are cheap and sometimes get brittle or will otherwise leak. You don't want to pull the dash later to replace them.

Unless the heater core is known to leak I would not replace it. I replaced mine when I was doing pods, but it was because I knew that it had a slight leak.

I would not bother replacing the heater core. Larry's is the only one I can recall leaking. Nor would I bother with the changeover valve. They don't fail any more regularly than does the heater core. Also, it can likely be replaced without disassembly - just go in through the glovebox/passenger air bag.
