E320 automatic model 1995 sation wagon thermostate

Well i need to change my above subject car's theromostate. Presently i have 78C theromo in it wanted to change it by 87C. The car runs very cold specially on the highways and in the city the two AC fans runs for a longer duration for cutting off as the car prsently is having 78C thermo in it. I personally feel by having 87C thermostate in it the fans will also cut off fast and the fuel average will also increase. Pl correct me if i am wrong.
Shall be grateful if the details information as how to remove and install the new thermostate is supported by pictures.
