Function of Elmwood Temp Sensor on Blower Motor Box W116 Bypassed?

I discovered a tiny temp sensor installed next to the ACC blower motor on my 1980 w116 450SEL that had been bypassed. I'm wondering what the function of it is and if I should try to replace it?

That is a "snap disc" bi metallic switch that turns on or off depending on temperature. I'm not sure what it is for either. Is the AC factory install or dealer AC?
The form factor of the switch is super common and still used today.
