I was curious as to how the diagnostic mode for the climate control works. How can you activate and deactivate that mode? (94 S500 & 98 CLK 320)

It is intended to be used by techs to give them info on what the actual values of sensors are. I do not recall off hand how to access it, but the numbers would mean nothing without the manual.
