i have a 190e2.6 with a 5spd manual transmission. I notice that if i go over small sharp bumps that span both rear wheels while accelerating in the 2nd or 3rd gears, i feel some driveline kickback after the rear wheels go over the bump, which is quite disconcerting to me, having an appreciation of the trauma the drivetrain is undergoing.

the only way to get around this is to let go the gas or de-clutch as i go over the bump.

why does this happen? Is this normal behavior with the 190 or is it specific to the 5spd manual models? Does this have anything to do with the complex movement of the 5-link rear suspension? Does this happen to other models with the 5-link rear suspension?

This is rather normal for the 5sp. The clutch has small springs in it that allow for this deflection of the drivetrain.
