1995 E320 Aftermarket rims

Hello,
I'm looking to purchasing 18 inch rims for my car. I need to know what is the correct offset for this size. Also I need to know if I would have to roll my front fenders.
Tire size needed as well. I would like to get a tire that is going to give me the correct speedometer reading and not a hard ride.
