Is there any one specific thing that would cause my 190E 2.3-16 to stall in rainy conditions?

Off hand, I'd guess that something was getting wet ...Seriously, does it go flat dead, or does it sputter and misfire?? Most likely culprit is electrical. Probably distributor or coil if it doesn't run at all. If it sits for a while will she restart and run or is it a struggle to even achieve that?

The car will sputter for a second or two, but start right back up with the turn of the key. It will run fine if it is moving, but once I come to a stop, it sputters and stalls. It is only when it rains because it hasn't stalled once since that rainy day.

Usually humid conditions will cause a relay to act up. I have seen fuel pump relays and overvoltage relays do this.

I agree with Benzmac -- my first choice of culprit is the Fuel Pump Relay. Had the same problem you describe on my '84 190E. I thought a complete tune-up would clear the problem, but I stalled at the first stoplight on the way home from the shop. Stopped into the nearest MBZ dealer and a tech found the problem to be the Fuel Pump Relay. They'll run ya about $130.00, or so.
