The two front seats seem to sag toward the center of the car. Tha passengrer more than the driver's.

There is no adjustment for this. You can have the seat bottoms(springs) replaced to correct it though.

What if the entire seat leans in one direction? I think the driver's seat in one of our cars (300E) had a motor temporarily stop working, because the whole seat tilts inward. I looked in the CD and found the sections on seat removal, but I couldn't find anything about realigning the motors, if that's possible.

I don't think it's the springs. I did catch a glimpse of a sawtooth rail on each side. Could a tooth have been jumped sometime? Are there only four bolts holding down the seat?
