At what mileage can I change to Mobil 1 on my 2000 CL500? I currently have about 1,000 miles. From two separate calls to MBUSA I was told change only after 5,000 miles, and a second call yielded an answer of anytime between 1,000-5,000 if I am going to make that change.

Since all AMG powered cars come with Mobil 1 from the factory, any time is good.

That's what I thought and mentioned and I was told that since the AMG engines are hand-built, they can start life with Mobil1.

I still contend that with the current low ring tension high tech engines, you could drain it at the dealer and replace it with Mobil 1 before you drive it home, and it would have no ill effects. The worst possible case would be a few thousand miles before complete ring seat. I don't think that it would PREVENT ring seating.
If the oil is so good that it PREVENTS ring seating, the engine would last forever. And the engine that will last FOREVER hasn't been built yet. By hand built you assembled by hand. The tolerances have to be maintained whether robot or hand assembled. This style of all aluminum V-motors has very small tolerances.
