Parking Brake comes on when I accellerate

Lately whenever I accellerate in my '72 250 w114 the red dash light for the parking brake comes on.. any suggestions on how to fix this?

Am guessing you mean that the handle stays where it was while the car moves, causing it to move off the "Stop" and the light to go off...

You can adjust it under the car, I think. You need to make it tighter so that the handle has a little more "spring" on it, but not so that the brakes drag.

Fluid level is high.. I installed new pads and discs on the rear recently and bleed the brakes.. this problem existed before and did not change after.

Have you tried kicking up the parking brake pedal with your toe when you pull the pinball machine style handle release?

LOL, good to see you again after all these years.....

Axil boots too, ye say?

Somewhere there's an aftermarket boot that attaches on top of the old without pulling the axles.

Identical problem with Moto Guzzi motorcycles - similar sized rubber boot between driveshaft and tranny coupling.

If you have a Guzzi shop nearby, ask them about aftermarket replacement boot covers..... with manufacture's name you might track down replacement boot covers to fit the MB, saving hassle of pulling the axles.
