filling the rad up to the neck and running it is about the best/cheapest test. the fact that you have both symptoms, cap and fluid makes me feel that you have a bad gasket. well, actually a bad head.

A lot of coolant additives are full of alcohol based things which is probably what you can smell.

I used the tool from autozone and one time it faded from blue to a greenish blueish color, the other times it stayed blue.

I did have bubble coming up thru the block tester thing when cold and it was warming up. Is this normal? I thought it might be because of the coolant rising in the radiator. I still need to fill the radiator up to the neck and check that way.

No not normal ,especially if the coolant has been maintained at the proper level. I think the headgasket is failing ,not failed yet. If the coolant anti corrosion has been maintained properly the head should be fine but if not it may be eaten through in places.
Get some quotes to replace the gasket and do ALL of the seals in the head at the same time. Replace all your hoses and timing chain and you will be set for another 30 years.

The bubbles were coming up thru the tester, thats that i thought was normal. Because there is air between the coolant level and the bottom of the tester, as the coolant level was rising the air in the rad had to go somewhere.

Im doing all the work myself, im having a MB place machine and re-build the head however.
