OK, so I've waded through a bunch of old posts and still can't decided what makes the most sense for tires on our 70' 250.

I don't mind skinny tires, in fact I kind of like them so I think I've ruled out 205s. Now that said I've seen recommendations for

185/75/14
195/70/14
185/70/14

Just can't tell what to get. Makes my head hurt! Help!

The owners manual says 175 SR 14.

Within your statement is the answer: 185/75 is the narrowest & tallest of the choices that you are considering.

I would go with 185/75 R 14 or 195/70 R 14, whichever is cheaper.
