Does anyone know whether a 16x7.5 rim with a 41 mm offset (late model 5 hole e-class replica) will work on a 87 300E with 225/50/16? I'm concerned that there won't be enough clearance between the tire and the strut.

I believe that the combo you are looking for will not work due to the offset and tire size it is not recommended. The offset will put the wheel to far in and the tire size is actually a little to wide and most likely will rub.

TireRack does have the 8-hole replica that is pretty sharp. They will fit your vehicle in:
$16x7.5"-$129

You can get the 5-hole replica from DiscountTireDirect (TireRack's competitor, sorry TireRac.) They sell them for:
15x7"-$109
16x7.5"-$129

I went ahead and purchased the 5 hole replica with 41mm offset and mounted the 225/ZR50/16 Michelin Pilot MXM. The clearance to the strut at the top of the front wheel is extremely close (4 or 5mm?), but it seems to fit without rubbing. Sure looks nice, but I agree the fit is a little close for comfort.
