Well, I disagree about your statement that a 350SDL is not a "performance" car. Okay, it's no E55AMG, but we're talking about a 4000lb car that can handily exceed 100mph when let loose. Higher speed rated tires (as Larry pointed out) have stiffer sidewalls and are able to withstand higher heat loads.
The stiffer sidewalls will give you better steering response and better overall control at highway speeds. Also, the (generally) better traction of "performance" tires gives better braking.
Mercedes equipped the W210 E300 with H-rated tires from the factory, and I wouldn't go below that speed rating. All IMHO, of course...
