I don't know if you can put a 5-speed in place of the automatic, but I do know that the 300D's only came with automatics.

You're partially correct. Only automatics were available in the US. Elsewhere in the world, however, they were sold with manual transmissions. If one is really determined to have a manual 300D, they would need to find a Euro parts car with a manual transmission. I am a manual transmission fanatic, so I understand this desire. I personally would not attempt such a conversion unless I had a complete, or at least complete enough, donor car to get all the pieces from trim plates to rear axle gears if necessary. Good luck,
