can cold starting w/out glow plugs cause significant coking in these cars?

I ran unheated WVO at the end of last summer and have been running it this summer. Straight, no additives. I've had no problems starting or running my car.
I only replaced the filter yesterday for the first time in 2-1/2 years since I got the car up and running.

Yes. Starting with cold WVO will cause coking; starting with no Glow Plugs can't help. You may also want to try a compression test. WVO can cause the piston rings to stick causing a loss of compression and hard starting.
