I am not sure you have properly identified the temperature sensor.

Does it screw into the head of the engine slightly above all the glow plugs?

Why is there soot on it?

The temp sensor is an electric resistor. It looks like this, but a little fatter on the cylindrical part, and the connector is a single pin.

Clean the stuff off and see if it works.
As the other member said at different heats the temp sensor allows different amounts of current to pass through it and that changes where your gauge points.
If something is coating the probe end or the threads are rusted and not grounding well it will not function properly.

I am sure these are still available from either this site or the M-B dealer...my experience is they usually cost $15-20 from either source, just get a new one.

from what you are describing, it sounds like the spring changes length with temperature and drags the copper plate along a gradient of electric potentials. (ie.. a potentiometer)

Depending on where you hacked it, it may be useless now. If you do manage to get it back together, the readings may be very far off due to the change in length of the housing when compared to the spring length.
