coolant?? hot in summer cold in winter

I have been driving the donor car ('79 300d) while I get ready to complete the motor swap to the '78. I have only been driving these cars for a year. When the '78 was running, it ran at about the same temp summer and winter, just over the 175 mark, unless I was going over 80mph, when it would creep up a bit more. with the other car it ran more like 190 in august at about 65mph, and now that it is cooler (about 25 degrees) I can't get it past 125 unless I go 70 or more. I know I can just put some cardboard on the radiator, but I am curious. do different cars vary this much? Anyone know why i would not run warmer in the winter? since I did in August, I would just assume that the same would be true now. thanks, Andy
