Honestly. on my 87 300D, i don't cover anything.

I start the car and let it run about 5 minutes. get it warm, not hot.
I just spray everything under the hood with engine degreaser.

Let it sit 5-10 minutes, depending on how hot it is outside.
Spray it down good.

Next step, wash the outside of the car so any grease that gets on your paint doesnt set in.

Same here, warm not hot though.

Depending on the degreaser, try to avoid electrical connections.

Use the entire can, don't be sparing. Be very liberal, especially on the front of the engine, behind power steering pump, etc.

NO COLD WATER ON A HOT INJECTION PUMP!

Ok, I said my piece. I don't really cover much. Just be careful to not get too much water everywhere. Some little electrical bits may not enjoy a shower.

I use the citrus Gunk. Works pretty well and then engine smells like oranges

The engine-brite is good for cleaning a clean engine, but I've had much better luck with Simple Green and other non-solvent based cleaners. There's some orange stuff the guys at Autozone tell me is as good as Simple Green, and you can buy Awesome at the dollar store, excellent cleaner/de-greaser. All of these are hard on alkalli metals so don't leave them on aluminum, rinse well.
