Dont do it-
-Get the head/cam from a 81 or newer to get the extra 13 hp you dont have with the 79 w116 motor.

You're in Michigan, isn't metric in CA? no way I would pay to ship back and fourth, Whunter knows a competent place im sure-Up the road from ya.

I agree, you should update the head. But I am not sure you need an entire head.... perhaps just the cam.

Also, no need to go to Metric.

Review the factory procedure for removing the head, then post questions.

You should be able to find the FSM online. I tried to post the file you need, but it was too large.

I'll reach out to Roy. Got his number. You bring up an interesting point on the HP though that I hadn't considered. I do have a 1980 300SD in the garage with a known good motor but thought doing the head would be less of an overall hassle (disconnecting ****). What was the cutoff on the improved HP? The 1980 has a build date of 10/1979.

Metric is actually 3 miles from my sister's house so I can have her boyfriend/significant other schlep for me. If I can find a good place locally of course but hate to save a couple hundred to regret it later...

any qualified machine shop should have no issue rebuilding your head. no reason to go to metric. if your head is cracked, NOBODY can rebuild it, not even metric. the core would be junked if your head is cracked.
if you get guides, seals, seats, and cleanup after magnaflux testing for cracks, rebuilt is rebuilt.
the cam towers, and the cam need to be 82 and up to get good hp, and they need to be 85 for maximum HP. also replace the head bolts~!

Hmmm...maybe the best course of action is use the known good motor now and slow-boat a rebuild of the other with the upgraded performance. Decisions...

Iron heads can easily be repaired by a qualified shop. Probably best to just get another considering the availability of parts, though.

Got the head released, picking up a hoist from a friend tomorrow. Will reach out to Roy for a local recommendation on machine shop. What/where might a guy look to find the '85 cam and cam towers?
