How to jump an auxiliary fan to see if it works

Can someone explain to me how to jump an auxiliary fan to see if it works. Im not too god with electricity and need to figure out my overheating problems. This fan does not seem to ever go on.

Plus my temp gauge jumps around and after driving for awhile on a hot day the needle will climb to 120C which them I have to turn the heat on.
