On an 82 240D from California, what vacuum components can be removed after removing the EGR?

Unless its an automatic, I beleive everything ontop of the valve cover and the injection pump....Diagram below...

Don't remove the vacuum stuff on top of the injection pump. That controls the automatic transmission shifts (assuming you have one). Several posts document removing the EGR vacuum controls. Look for one w/ diagram above w/ red x's for removal. Searching from google works best for me. Basically, all vacuum lines from the EGR valve and AIR valve (on turbo inlet) and the electric "switch-over" valves that link to them. People w/ later engines, don't need the injection pump "rack position" sensor

You can use a thin piece of sheet metal instead of the gasket (shh, don't tell anyone).

I have a 1987 300SDL and just took off the EGR, total mess. I need one of them kits! Not sure if they are still available?
