I love good quality, sharp knives. That looks like Damaskened steel. It's very expensive and contains two types of steel. One sharpens better and the other is harder and holds an edge longer. I don't know who invented the process, but it's very beautiful. It looks almost like wood grain.

Yeah I use Wusthof Trident, have gobs of them. Be nice to upgrade to some fine Japanese steel. I'd still have the Wusthofs if I ever get back into a commercial kitchen.

There's nothing like slicing a tomato with a razor sharp knife. Ever tried it with some old, dull POS knife? That's enough to turn anybody into a gay kitchen knife lover. Woohoo!

There are many German knives other than Wustoff and Henckels that are also made in Solingen, including fine sushi knives. I have a couple of Japanese Damascus sushi knives, but I don't make sushi ( I shouldn't be allowed to ever) often at all, so I use the knives for other things and they chip and flatten. They are great for fish though.

I was given two knives that CIA Hyde Park has licensed to be produced by someone in Germany: they are 1.4116 German Steel x50 Chrome Mo V 15/24010. They are my favorite knives, and I don't think they have started retailing them yet (they were given to me by a kitchen supply owner). Extremely sharp, hold a great edge, and aren't too thick to use on delicate work.
