Many of the carbs can be removed with no adverse effects. Many of the carbs are very profitable but not very healthy. Atkins was much maligned, everyone had an opinion but few ever read the source materials and kept up with the advances. After Atkins died and the marketers bought the rights to his name, integrity was out the window.

NutriSystem is now advertising the "glycemic advantage" - same idea, differentiate between useful carbs and profitable garbage.

Read about the glycemic index if you want to learn about this.

I believe that there are a lot of people in medicine and in medical research that are motivated by more than just profit. Motivation to make a profit does not rule out other more altruistic motives, either.

Making a profit is not evil. Sometimes I get the impression from things I read here that a lot of folks see it that way.
Profit is one of my favorite things in the whole world.

Destroying other people's health for profit is sick.

Determining profit when there is public money involved is a fuzzy area.

Sometime motivation to make a profit does rule out altruistic motives.
