Cooking with butter is soooo... good. You don't have to eat it, just baste your roasts with it, pan roast, butter poach, etc.

Is there a credit for healthy BMI people buying such goods? Fat people need to pay the tax so they buy less and then slim down is the logic- so skinny people are paying for fat people by paying the tax. I object to any tax based on other people's chosen stupidity in the form of actions which are not mandatory.

Oh, yeah. I thought they were taxing fat people, not fat in foods. If we taxed people on their body fat content in the US, we could get this national debt down in no time and probably improve the health and lives of millions of people in the process.

Nah, it's just like with smokers. There will be some decrease as a result of the taxation but plenty will still continue with their bad eating habits (myself included).

There are still people dumb enough to smoke and then sue the tobacco companies for their own stupidity. I wonder if we could get a class action suit against Big Food claiming that we non-healthy eaters were completely unaware of the dangers of fat?

The pastry chef in one of the hotels where I used to work was Danish. He used only Danish butter for his puff pastry and IMO the results were better than US butter.

They aren't the dumb ones. It is the people that give the award that are dumb. They are the smart ones trying to work inside a system to maximize their profit.

Compared to Europe, US butter is pretty weak stuff. The yeild when making clarified butter for sauces is higher with non-US butter.

I don't agree with European butter being better butter. I have been to Europe a couple of times and never noticed it. When I was a child it was usually the rural child's job to help mom make the butter. I have helped my mom make butter often. Different cows produce different butter. Holsteins produce a very light butter, Jerseys produce a very rich butter. Butter is simply the congealed fat solidified and with nothing added. I also worked in the creamery while in HS and they just dumped all the wholemilk into a monster churn and it was good butter, but not as good as the butter we made from that little Jersey cow. I am sure that if you will pay a premium, you can get a butter with a color, taste and maybe texture here as well as Europe. Home churned butter was delicious, same with home made icecream, even the buttermilk was delicious.
