Texas Barbecue Declares War on Rivals
Texas Monthly's editor Jake Silverstein says that he’s ready to "declare war" on all famous BBQ regions, including Kansas City, North Carolina and Memphis. "It's a declaration of supremacy. Our level of authority on BBQ is completely unmatched," he said, noting they were partly having fun with the map, "but [we] also believe what we’re saying." |

"Texas Barbecue" I've had ranged from pretty good to tree bark. I've had much better in Georgia, Mississippi, and (of all places) Virginia. Fat Matt's Rib Shack in Atlanta sets the standard by which all BBQ is judged.

I'd forgotten about that one! Dang. Last time I was there it was open only a few hours, a few days per week and way freaking packed with locals. They also sell fried catfish, right? (I'm thinking I may have The Shed confused with an establishment near VanCleave).

Texas has damn good BBQ, but I've been to a few haunts in North Carolina which are way up there in my mind. And I'm born/raised in Texas. For that matter, there was this place called "Dem Bones" in Santa Monica, CA that had absolutely killer beef ribs...

Not sure about the catfish but it is actually in Vancleave/Gautier so that might be the one. They have also opened locations in Mobile and Gulfport.

Can't we all just get along?
The best part about being from the Northeast, where there is no BBQ style to limit the offerings, is that I can, and do, enjoy all of them! There are a number of good joints in CT, some with national award winning masters, that offer their interpretation of the best from all of the regions. Mmmmmmm...BBQ...

let's not forget that BBQ was created in North Carolina by poor blacks who needed a way to tenderize inexpensive cuts of meat. They literally dug a pit in the ground to smoke the meat for long periods of time. That is how the term "pit BBQ" came about.
Some of the best BBQ I've ever had was from hole in the wall black owned restaurants either in either the South or the Midwest. Some of them are walk up windows only with minimal outdoor seating.
