Got a Kamado Joe Smoker

I have wanted one for years and I finally saw one at Costco for $220 less than I could find it anywhere else so I went ahead and pulled the trigger. Got it set up pretty quick. I work tomorrow and I'm off Sunday so I know what I will be doing. I think I'm going to start with a brisket.

They're nice. I'm dealing with a Masterbuilt electric smoker right now, and love it. I've used it for everything from pork shoulder to cold smoking cheese. I love putting whole green bell peppers in it, along with whole garlic cloves. Good stuff!

I smoked my brisket on Sunday. Over all a great smoker I think. Burns very clean with lump coal. I think I may need to get larger size coal chunks so it does not burn out as quick. My fist load of coal burned out in about 4 hrs so I had to relight it. That took a while and the brisket cooled down in that time. The egg burns pretty clean while still imparting the smoked flavor to the meat. Practice makes perfect..... I have about 10lbs of brisket that we need to go through but once that is gone I need to smoke something else.

Went with the same - and love it. 40 years of dealing with wood and charcoal smokers is for the more ambitious with time Set time, temp and load wood chips in auger.....buzz me when we are there

That smoker looks like a work of art, congrats.

Got a couple perk turkeys back at Christmas. I was in a hurry and skipped some steps but they were moist and tender and tasted really good, like ham. I put salt and sugar in the cavity and smoked them with hickory gathered from our own trees. I will raise my own turkeys if I live long enough.

I have brined meat in the past. It is worth reading enough to understand the difference between brine and marinade. I am going to try to make my own pastrami.
