Think about racing myself...
I'm thinking about running my 560sl on a track, mainly to learn the car again, where the envelope is, and bettering my response time. I think it would be a fun car to run. Knowing that I've not done it on that level yet, which direction should I go to gain experience?

drag or Grand Prix type? %60 for drag would go good with a NOS sniper kit,wet shot,150 hp jets.

mercedes or bmw clubs might have track days you could use.
Also consider scca autocross, also called solo. It does the trick for me and almost no chance of hurting yourself or your car. That benz will lean but will really corner if pushed.

Do you plan to go through this car from a safety and performance restoration point before taking it on a track? Pushing a car with brake and suspension parts which may be up to 34 years old is akin to asking Grandma to move your barbell set to the attic.
Trade it in for a five year old Miata if you want to bring something reasonable to the track.

TRACK DAYS !
Sounds like fun to me .
I'm sure you know to get the car up on a hoist and closely inspect the K Member first, yes, do this again even if it's been done . Experiment with the tires, pressure makes a lot of difference a few pounds more or less . be sure to report back here !  .
