Kitchen Knives
Like many my lady has Chinese made kitchen knives and they fail to remain sharp for more than three uses , I keep sharpening them but I wonder if maybe we should get some Japanese or maybe heinkels ? .
MY ex wife (thankfully ex !) used to destroy any knife I bought her so I stopped after a while . It's been a while now (longer her gone than we were married), I don't think my lady now would appreciate me bringing home any good quality knives I found in estate sales, I have to watch my budget closely as I'm on a fixed income now . She's bought at least two sets of kitchen knives off HSN, I don't trust anything bought from the T.V. . Thoughts ? .

I have been dissapointed with many knives over the years. Strange as the technology is so old. I tend to use eletcric knives on turkeys and large roasts automatically for years now.

My employer sells those when the road show comes through. They are god awful expensive but many say they are worth it. I got some of the knives that come in a block and have that black plastic handle molded over the shank of the knife. I have had them for well over a decade and had them sharpened twice. Seem to work very well for me and I paid may be $100 for them.

I hope more chime in . We can't have a butcher block full of knives because we're a Foster care facility . Stupid I know but the rules are there . They didn't even want us to provide the boys with butter knives, I held firm on that and they let it slide . I keep the cooking knives put away .

Up close and personal using a knife seems to be growing. Kind of hard to understand.Seems to be more knife incidents in Canada reciently than shootings.
For example two multiple stabbings yesterday. In one case he stabbed five people. |

Purchased a couple of Messermeister Oliva Elite kitchen knives recently and I really love them. Sharp, beautiful and pleasant to handle.

Every now and then I'll ask the lady at the Subway if I can have a couple of their knives which is my "go to" knife in the kitchen. Stays sharp for a long time if not misused.

Cuisinart Ceramic Knives.
I have had a set of these for about three years, they perform well. After I cut up a tomato I simply wash the knife off with water and put it back in its holder for the next go.

We had some good knives around here till the wife bought a knife sharpener. Bless her heart she screwed every one of them up. Thank goodness for Subway.

I'll second the carbon steel route. My 90 year old mom has been using the safe knife in the kitchen my entire life. I cut an apple with it last time I was there and it still hold a sharp edge. They do discolor over time but you can call it patina.

If those Subway knives are not serrated. I have noticed they do a decent job on fresher bread rolls. Yet another franchise that does not seem to be doing as well anymore in Canada. I can see a company owned store employees giving knives out.
When I find something I like I try to stick with the item when it needs replacement. Hoping the original quality is still present. Taken to extremes I just replaced my razor saws after sixty years.To facilitate repairs on almost everything requires a mass of tools it seems. Aquired over time it is not noticeable. Total cost today almost unimaginable. |
