Would a 1972 280 4.5 be a decent project car? There is one for sale near me for $700. Looks pretty clean, needs brakes.

Great car, good parts availability, not that hard to work on, but to me a "decent" project is one that is financially viable - where you can sort of get out the money you put in. You can put on awful lot of money into sedan like that and not have much market value when you're done. If you're going to do the work yourself you probably won't get hurt too bad - but a profit is not a realistic goal. This all assumes it's not rusty - if it's rusty definitely look for something else.
