my amg came with white face gauges. I guess mercedes thought they were an upgrade!  That being said, they are a little too white for my tastes. My car's are a little less bright.
Change the interior of your car to your liking. Some will like it some wont. Even leaving your car bone stock will get the same results. Do what you like imo.

I think a lot of the 80's model AMG's are hideous mutilations as well!
Cars come a certain way from the factory. If you like modifications by all means mutilate your car anyway you see fit. The problem comes when you want to sell the car to someone else. I won't even test drive cars that have tasteless modifications because there are so many unmolested cars on the market. That includes tacky aftermarket CD players. Even if you find someone who likes heavily modified interiors its likely that they would want different modifications than you would.
To many buyers seeing modifications on a car is the same as seeing body piercings or tatoo's on a person. There is a negative connotation to them. When I see modifications I am under the general opinion that the owner probably spent their service and maint money on colored trinkets to adorn their interior.
