1996 s320 water temp

Water temp spikes from 87 to + 120, kind of scary, then ( while driving ) it returns to 87 , then back to 120 +.Changed therm,water cooling senser and its sitll spiking .whats going on!

Either a bad temp sensor/wiring or there's air in the cooling system.
