does anyone know how many thousands of an inch you can plain off the head of a 1994 e320

According to WIS-net, the minimum total height (distance from deck mating surface to valve cover mating surface) should be no less than 135.5mm. You'll need to measure the total height before you can come up with how much material you can remove. It should be approximately 136mm.
