My temp needle goes up and down at different times of the day, not depending on outside temp or if a/c is on or off. Any idea whats wrong.

Maybe a t-stat sticking, thats what I woulds try. I have seen these where the gauge would go high until the stat opened and then dump cold coolant until it closed and repeat the process. Good Luck

Is it possible that the fuse for low speed aux. fan was burn out. I remembered this fuse was recommended to be 25A instead of original 15A.

another thing, is that when i shut the car off, the water in reserve bubbles.

this sounds weird to me. air is present in your coolant reservoir, ..it looks like that the system is getting pressurized intermittently. Doesn't look normal, ..are you loosing coolant too ? Your temp sending unit is sensing various temp changes. Check if there's presence of oil in the coolant..

Open the hood, remove the cap on the water reservoir, fill the reservoir till the top while the (recently used) engine is running and REV it a couple of times. If the water comes blowing/boiling/sputtering out of the water reservoir, you have a leaking head gasket (causes the engine temp to float around).
Watch your head incase the (hot) water does come blowing out of the reservoir!
