Stalling/ Hesitation

First start with the Mass Air Sensor that is plugged into the intake sleeve. Make sure it is clean. As well, check you wiring harness on that M104 engine! They casing falls apart and can inhibit the driveability SEVERELY!

Now, my honest opinion? I would check out the Oxygen Sensor! I had the same problem with my 1996 E320, and VOILA! She behaves again!

When does the stalling occur and how often? Does it occur when it running or idling? How is the cars throttle response slow or fast?

when the car sits for a few days , the stalling is really bad , I'll take it for a drive on the highway and open it up , and the stalling gets better , but the car still has no balls when floored !!

You could damage the mass air sensor if you drive with out a air filter.
it's sounds to me that your car running rich on fuel because the car works fine with out air filter. So the O2 sensor is a possibility, the sensor is expensive but if it never been replaced it is a good idea to change the sensor even if the sensor is working.

What shape is the air filter in if it makes that much of a difference? You need to have a shop see if the air mass sensor voltage is within spec.
