You maybe weren't around in the 1970s when all the Detroit iron mongers switched to 190 degree thermostats--that was done in the interest of emissions and fuel economy, too.
Current Mercedes engines feature electronic engine cooling thermostats, too. Mercedes has done it a bit better than BMW, as there's no "replace water pump/thermostat/overflow tank/radiator/hoses every 60K miles" recommendation as there is for BMWs. That heat is tough on the plastic.
