The oil pan has a sensor in it that detects low oil level. Check the dipstick, you may be getting close to being a quart low. Sometimes the sensor gives false readings when it needs to be cleaned/replaced.

I have a related question/situation. When my 300E is running, it disperses the oil throughout the engine to the point where the oil light occasionally turns on (I keep a couple quarts in the trunk for emergencies though...) and while running it is on the minimum line or below, but as the car cools and I check the oil, it is smack dab in the middle between min and max. Obviously the car circulates oil while running but that seems like a lot for the engine to use, especially tripping the oil light. Can anyone vouch for this being normal?? Sorry for the potential thread hijack OP, but I feel like our problems are related.

As long as you aren't on MAX, put a little more oil in. It may just do the trick.
