1981 380 sl AC issues

When I accelerate to around 25mph the ac total cuts off, but when i let off the gas it comes back on. I don't think its a vac issue, rather its electrical. I believe this because when i get to around 25mph Ill hear a click form the fuse box then the air stops blowing. Anyone know what's causing/ how to fix this. Thanks./

Do you have the ACC (Chrysler servo) system? If so this is a classic symptom of a vacuum leak.

Ahh, so to go about fixing this issue I need to find the vacuum leak?

Yup. Start by checking the fresh air flap vacuum pod under the dash in the passenger side footwell. They are notorious for leaks after so many years.
