400E strut/ shock and shim choice

I'm replacing my coil springs all around as part of my upkeep on the car. The right side is sagging a bit and figured I'd just replace the springs all around. I'm going to use factory OEM springs. I see that the top spring caps (shims) are available for the 124 ranging in thickness from 8mm to 23mm. My impulse was to use the thinner 8mm units all around to keep it as low as possible without actually using lowering springs. Is this a good idea, or should I use a different thickness?

I'm also planning on putting in new control arms and struts/shocks, and sway bar bushings since it will all be apart. I'm also trying to decide between Sachs HD struts and the softer Sachs OEM ones. Not sure what the difference will be. All thoughts are welcome!
