I have a set of pliers made specifically for pinching off hoses, I suggest you invest in a pair.
Who cares if you over fill the 5 gallon container? Are you going to be transporting the fuel somewhere? You can easily see the fuel level rise in the tank.

When opening up the fuel lines underneath the car, is the flow of gas slow or does it rush out like niagra falls?

It is pretty quick.
Ah, I just had an idea... you could put a valve there like your water spigot outside to slow the rate of fuel coming out
