is there any benefit when performing a italain tuneup to your benz? i read on this forum that flooring it from a dead stop and giving it a good run helps blast off and burns away deposits in your valves and injectors

That would be every day driving for me! :D There are many benifits to pushing an engine to its limits. Doing it too much does cause wear though.

Cruising at highway speeds for an extended period of time (like an hour or more) can also clean the engine's built-up deposits and is easier on the engine in the long run. Plus, you will heat the oil up to remove deposits and bring your battery charge up (esp if you do a lot of city driving and/or short trips). Besides, a road trip in the ole benz in a lot of fun!:D!

A proper Italian tuneup (or Polish-Bohemian, in my case)
 

does not involve flooring the throttle from a dead stop, but taking the motor up relatively gently to maximum cruising rpm and holding it there for a few miles (usually in something lower than high gear in order to stay legal or somewhere near it). This will clear carbon, but maximum acceleration in a motor which is carboned up from too much slow driving will sometimes burn the carbon into a ceramic-like crust instead.

But with the high energy ignitions nowadays this is seldom as necessary or effective as it was in the days of first series Porsche 911s and 24 valve V12 Ferraris.
