But he doesn't have a current drain (atleast consistantly) when sitting parked with the key off, etc.

It only creeps up occasionally.

I really do NOT thing that anything could drain the battery in the order of 2min after some driving with fine voltage and have the voltage still check out.

My bet is still on a ground strap or starter/solenoid issue.
