So it is possible my filter bolt may need 2 o-rings? I assume it will be apparent when I remove the bolt. The bolts that have 2 o-rings must have 2 recessed places for the o-rings to sit and one o-ring bolt must only have 1?

Yes, there is a machined channel for each one, it will be obvious once you have the (banjo) bolt out, see pic.
