Check out the Total Driving Experience. Put in the search box 'Texas Tour'. This is something they do at the raceway now and then.

There is a track 40 miles west of Tulsa, which is only about 300 miles away, called Hallet Motorspeedway. I know the SCCA races there from time to time. I don't know about individual driving events but you could always contact them to find out.
