Update!
Wow, two years have passed! And I still don't have them upholstered! Or the USB stuff all finished!
However, I did come into a w126 passenger seat in the same color as my w124 seats. Its heated too! So I re-pinned the harness for the new seat and discovered that I was having power supply issues with one of the power supplies. I had to disconnect it. I was curious if the heated seat worked so I put my meter on it and I got like 2.5 Ohms, then I threw the other power supply on it. It pulled 4.5-5 Amps for one set of elements. I tied both together but that was too much for the power supply. It kept turning off. So for now, I have the back set of element hooked up. They're only running at 10V or so as the power supply is cheap and dipped down real low under the load. Maybe I'll buy a more substantial power supply down the road... just like the upholstery!
