This seemingly solved the issue. I added quite a bit on level ground. Probably a liter of water and coolant. Enough to fill it to the bottom of the neck. Drove it about 20 miles today and came back to garage and let it idle. Temp stayed the same. Turned heat on high and the temp gauge went down!

I'm guessing air pockets were settling in the engine at idle causing the temp to rise. We will see over the next few days.
