For this vintage, I see Dot-4 mentioned. Castrol makes a good Dot-4 that's readily available. I'm satisified with Dot-4 performance.

Lots of opinions here about bleeding. Some have even posted photos of home-made pressure-bleeders. I bought mine pre-made years ago - hooks up to a spare tire, etc. Works fine.

2-man is likely ok - I think sometimes people get carried away with pedal pressure when going this route - easy does it.
